1. Classic bruschetta with heritage tomatoes
Slice your ciabatta thickly, drizzle with good olive oil, and toast under the grill until golden. Rub with a halved garlic clove while still warm, then top with diced heritage tomatoes, fresh basil, and a pinch of flaky salt. It's the simplest thing in the world, and it's perfect.
2. Overnight French toast
Take your slightly older sourdough โ the kind that's a day or two past its best โ and cut it into thick slices. Soak overnight in a mixture of eggs, full-cream milk, a splash of vanilla, and a pinch of cinnamon. In the morning, fry in butter until golden and serve with fresh berries and a drizzle of honey. The dense, tangy sourdough absorbs the custard beautifully.
3. Panzanella salad
Tear your day-old bread into rough chunks and toss with olive oil, then toast in the oven at 180ยฐC until crisp. Combine with ripe tomatoes, cucumber, red onion, olives, and a sharp red wine vinegar dressing. The bread soaks up the juices and becomes the best part of the salad.
4. Tartines for a lazy Sunday
A tartine is simply an open-faced sandwich, but the French have elevated it to an art form. Start with a thick slice of sourdough, spread generously with salted butter, and top with whatever you have: smoked salmon and cream cheese, avocado and lemon, or simply good cheese and honey. Serve with a glass of something cold.
5. Bread soup (ribollita)
If you find yourself at the end of the week with a few leftover heels and crusts, don't throw them away. Ribollita is a Tuscan peasant soup that uses stale bread as a thickener. Simmer cannellini beans, cavolo nero, carrots, and celery in a rich tomato broth, then stir in torn pieces of stale bread. Let it sit for 10 minutes before serving โ the bread will absorb the broth and create something deeply comforting.
